Preheat your oven to 180°C. In a baking dish, place the cherry tomatoes. Add the whole garlic cloves with their skins on. Drizzle the tomatoes with olive oil. Sprinkle with sea salt, freshly ground pepper, and dried herbs. Place the thyme sprigs among the tomatoes.
