Ingredients
 150 Flour
 100 Oat flake
 125 Extra fine butter
 1 pinch Fine salt
 8 Milk or water
 1 Red onion
 30 Extra fine butter
 1 Liquid honey
 2 Egg
 20 Liquid cream
 20 Whole milk
 Salt
 Freshly ground pepper
 50 Chives
 1 Log of goat cheese (180 g)
Directions

Prepare the dough: Place the flour, oats, a pinch of salt, and the butter cut into small pieces in a mixing bowl. Combine everything using your fingertips, gradually add the liquid, knead the dough, and then form a ball. Let it rest in the refrigerator for 1 hour.

Peel the red onions, slice them, and sauté them in butter and honey over medium heat for about 15 minutes. Season with salt and freshly ground pepper. Remove from heat. Let cool. Chop the chives.

Preheat the oven to 180 degrees. Slice the goat cheese into rounds. Roll out the dough on a lightly floured work surface. Line a tart pan with parchment paper. Poke the bottom with a fork, then spread the cooled red onions and rounds of goat cheese on top.

In a mixing bowl, whisk the whole eggs, add the liquid cream, milk, chives, salt, and pepper to taste. Mix well. Pour the mixture over the onions and cheese.

To finish, bake the tart for 35 to 40 minutes. Enjoy the tart hot or warm. It’s also a delight as an appetizer when cut into squares! Enjoy your meal!
