Red lentils have been consumed since ancient times. We are rediscovering them to create many delicious and original recipes. Here is an easy recipe for a red lentil salad with avocado.

Ingredients
 200 Red lentils
 250 Cherry tomato
 2 Avocado
 200 Feta
 100 Parmesan
 1 Lemon
 Salt
 Pepper

Rinse the red lentils before cooking them in three times their volume of water (without salt) for 10 minutes.

Drain them and let them cool.

Cut the cherry tomatoes in half. Cut the avocados and feta into cubes. And slice the parmesan into thin slices.

To finish, mix all the ingredients in a bowl: cooked red lentils, cherry tomatoes, avocado, feta cheese, and parmesan. Drizzle with lemon juice, salt, and pepper. Serve cold.
