Head towards India with this delicious recipe for Indian-style quinoa balls.
Cook the quinoa in a pot with twice its volume of water. When the water starts to boil, reduce the heat and let it cook for 15 minutes. Drain if necessary. Set aside in a bowl.
Heat a tablespoon of oil in a skillet and cook the vegetables for about 10 minutes over low heat.
Add the quinoa, the egg, the cornstarch, the curry, the chili, the salt, and the pepper. Mix.
Shape balls the size of an egg using your hands.
Heat the remaining oil and gently fry the meatballs for about 7 minutes or until they are golden brown.
To finish, place them on a plate covered with paper towels. Enjoy warm.
