To change things up from quince paste, discover this easy quince jam recipe! A traditional grandmother's recipe, low in sugar, with Jewish, Algerian, or Tunisian origins.

 1 quinces (peeled and cored)
 1 Sugar
 2 lemon juice

Preparation of quinces Prepare a basin of cold water and add the lemon juice. Peel and remove all the hard parts of the quinces, cut them into small cubes, and reserve them in the lemon water.

Preparing the syrup In a jam pot or a large pot, make a syrup with one and a half liters of water and sugar. When the sugar is completely dissolved and the syrup begins to boil, drain the quince and add them to the syrup.

Cooking Let it come to a boil again, then reduce to medium heat, cooking for 35 to 55 minutes (or more) while stirring occasionally with a wooden spoon to prevent the quince from sticking.

Preparation of the jars During the cooking of the quinces, wash the jam jars and their lids and immerse them in boiling water.

At the end of cooking, blend the jam using an immersion blender (or not).

    Excellent very fragrant jam. For my part, when I drain the quinces, I save the juice, add pieces of pears and quick-setting sugar, and I end up with an excellent pear jam with quince jelly.

    I have already made all sorts of jams, and recently I made grape and persimmon jam, it's a delight. I also made grape and quince jelly. Now, to change things a bit, I will try your quince jam.

    After several attempts, I always ended up with applesauce. With this recipe, that's not the case. I used 1.7 kg of quince, 1 kg of sugar, and a liter of water, it turned out simply perfect. Thank you for this excellent recipe.
