Here is the recipe for puff pastries with asparagus and basil pesto, perfect for an easy and different meal. This recipe featuring white asparagus, basil pesto, puff pastry, pumpkin seeds, and parmesan is super simple to make and will have you crunching with delight.
Preheat the oven to 180°C.
Peel the asparagus with a vegetable peeler, then cut the base to 3 cm to remove the least tender part.
Cut the asparagus in half lengthwise and then brush them with a little olive oil.
Cut the puff pastry into 4 squares, then spread the basil pesto.
Place a few asparagus in the center, then fold the sides to form a pocket.
Brush the puff pastry pockets with the egg yolk using a brush, then sprinkle with Parmesan and pumpkin seeds.
To finish, bake the pastries on a baking sheet for 25 minutes. It's ready!
