A way to reconcile those who are hesitant about cauliflower and broccoli, with this salad of potatoes, cauliflower, and broccoli. A healthy and delicious dish for the whole family, with some hazelnuts for even more indulgence and a walnut oil dressing.
Wash the tomatoes and cut them into quarters. Peel the onion and slice it thinly. Wash the broccoli, cauliflower, and potatoes. Cut the broccoli and cauliflower into florets. Cut the potatoes into pieces.
Cook the potatoes in boiling salted water. Drain them. I did not peel the skin since they were new potatoes. Cut them into slices.
Prepare the dressing: mix walnut oil, soy sauce, sparkling water, salt, and pepper. Add the hazelnuts.
To finish, in a bowl, add tomatoes, broccoli, cauliflower, onion, and potatoes. Pour the dressing over the top.
