Today I present to you a new dessert with plums. It's the peak season and I’m making the most of it, because I love it. These squares - a mix between a cake and a tart - consists of a soft and crumbly dough, with a good buttery flavor, and a generous layer of plums, topped with a sandy and crunchy streusel. A delight to share with family or friends.
Prepare the streusel. In a bowl, add the softened butter cut into pieces, the sugar, and the flour. Mix with your fingertips until crumbly. Place in the fridge while you prepare the rest of the cake.
Prepare the fruits. Wash and dry the plums. Cut them in half, remove the pits, and then cut each half into 4 pieces.
Preheat the oven to 180°C, static heat. Prepare a rectangular mold of 28*24 cm (a square mold of 26 cm also works). If it's not silicone, like mine, remember to butter and flour it beforehand, or to line it with parchment paper.
Prepare the dough. In a bowl, cream the softened butter with the sugar. Add the eggs one at a time and mix a little between each addition to incorporate them. Then do the same with the vanilla and the milk. Add the flour and baking powder and mix at low speed until you achieve a smooth texture.
Pour the batter into the mold and spread it evenly.
Arrange the pieces of plums over the entire surface of the dough, placing them side by side on one side.
Sprinkle on top of the streusel.
Bake for 45 minutes or until the surface is golden.
Let cool completely, then cut and place on a platter.
Finally, sprinkle with powdered sugar before serving.
