Preheat your oven to 200°.
Wash the plums, cut them in half, and remove the pit.
Cut the slices of bread diagonally in half to obtain triangles.
On a first triangle, pour a drizzle of olive oil, then place a few spinach leaves, two slices of cured meat, two slices of sheep cheese, and about ten pieces of fruit. Season with a splash of balsamic vinegar and a few turns of the pepper mill, then cover with a second triangle of bread.
To finish, when your sandwiches are ready, bake them for about ten minutes.
