The day before, make sorbet (or soften store-bought sorbet), pour it into half-sphere molds, and place it in the freezer overnight.
Crush the delicate crepes to make crumbs.
Place the chopped white chocolate and pistachio paste in a container. Melt in the microwave for 30 seconds, then stir to combine well.
Incorporate the pistachio powder and cookie crumbs. Spread this mixture between 2 sheets of parchment paper using a rolling pin to a thickness of 5 mm, then refrigerate to allow it to harden.
To finish, take out of the fridge and cut out circles using a round cutter, then place a half-circle of sorbet on top. Serve immediately.
