A recipe for chouquettes.
Steam the pods, previously cut in half, for 10 minutes. Pass them through a food mill. Let cool.
Heat 250 ml of water in a saucepan with salt, pepper, and butter. Once the butter has melted, add the flour all at once.
Mix for 2 to 3 minutes, then when the dough pulls away from the sides, add the eggs one at a time, stirring well.
Preheat the oven to 180 °C. Add the pea puree and 80 g of parmesan to the saucepan, then mix.
Place spoonfuls of the batter on a baking sheet lined with parchment paper, spacing them well apart. Sprinkle with the remaining cheese.
Bake for 20 to 30 minutes without opening the oven door. Serve immediately.
