This pea hummus recipe is offered by a private chef and caterer.
Cook the peas in a pot of simmering salted water for 5 minutes.
Blend together rinsed chickpeas, avocado, cilantro, tahini, olive oil, and lemon juice.
Once cooked, rinse the peas under cold water (they will retain their beautiful color), then add them to your mixture and blend again (set aside a few for garnishing).
Add a pinch of salt, pepper, and blend one last time.
To finish: Presentation: Place the hummus in a small bowl, add a few peas, some coriander leaves, sprinkle with sesame seeds, and enjoy!
