Start by preparing the granita 12 hours in advance.
Peel and segment 2 grapefruits. Squeeze the remaining grapefruits to extract the juice.
Boil the water and sugar together, then let it cool.
In a blender, mix the pieces of fruit along with the juice and the mixture of water and sugar.
Pour it all into a large rectangular dish and place it in the freezer for at least 12 hours.
Stir the mixture regularly using a fork.
The next day, peel and cut the third grapefruit into segments.
At the moment of serving, distribute the oysters onto plates, then add a teaspoon of granita and a few leaves of tarragon.
