Take the leg of lamb out 3 hours in advance.
Make shallow, parallel cuts on the top of the leg of lamb.
Rub the top of the leg of lamb with fleur de sel, rosemary, and thyme.
Preheat your oven to 180°C.
For the garnish, cut turnips, carrots, and onions into quarters. Make a bed of vegetables in a baking tray and place the leg of lamb on top.
Bake the leg of lamb for 45 minutes, basting every 10 minutes. Let it rest for 25 minutes before slicing.
To finish, use the juice at the bottom of the tray for saucing.
