To begin, wash the potatoes. Cut about twelve slices into each potato, stopping about three-quarters of the way down.

Then cut the cheese into 24 pieces and the red onions in half. Slice the onions into thick slices.

By alternating, place a piece of cheese and sliced onions between each slice of potato.

Drizzle each potato with 1 tablespoon of olive oil, season with salt and pepper.

Wrap the potatoes tightly in aluminum foil and bake them at 180°C for 25 to 30 minutes.

Meanwhile, prepare a chive cream without salting or peppering.

Once the potatoes are cooked, add some chive cream, a pinch of salt, and a twist of pepper.
