In the hot pot with a little oil, brown the pieces of pork. Add the shallots and bacon. Stir well. Add the mustard.
Add the white wine and beef stock. Cook for 10 minutes, then cover with water and continue for 30 minutes.
Add the mushrooms cut into quarters and the potatoes.
To finish, continue cooking for 30 minutes. Check that the cooking is satisfactory and continue for another 10 minutes without a lid to thicken the sauce. You can add a little cream for extra richness.
