A recipe for mozzarella nests stuffed with panzanella, a Florentine salad made with bread and tomatoes.

Ingredients
 4 125g Fresh Milk Mozzarella
 12 Cherry tomato
 50 Yellow bell pepper
 Green part of a green onion or chives
 1 Small cucumber
 Basil
 1 Apple cider vinegar
 Extra virgin olive oil
 Salt
 Pepper

Using a melon baller, hollow out the mozzarella in the shape of a nest. Keep the hollowed mozzarella as it can be used to make a pizza or to season cold pasta.

Clean and wash all the vegetables, then cut them into cubes. Season them with a spoonful of oil, apple cider vinegar, salt, and pepper. Set aside.

Meanwhile, cut the bread into cubes and toast them in a pan. As soon as they are golden and crispy, turn off the heat and mix them with the salad, then stuff the mozzarella nests.

To finish, garnish with a basil leaf and serve immediately the mozzarella nests stuffed with panzanella.
