A delicious recipe for quick and easy mint and cherry tomato tagliatelle!
Bring a large pot of water to a boil.
In the meantime, wash the tomatoes and cut them into quarters.
Then, place them in a marinating bowl with salt and 2 cups of extra virgin olive oil. Peel and slice the onion into rounds, then chop the chili into large pieces and add to the tomatoes.
Also add the chopped mint leaves, mix well, and let marinate for 15 minutes. When the water boils, add the salt and immerse the pasta.
Cook them for the necessary time, then drain and let cool slightly. Combine the pasta in the bowl with the rest of the sauce and add the mini mozzarella.
To finish, serve hot with a few mint leaves for garnish.
