Hello to all of you. I invite you to enjoy these mini square puff pastries filled with eggplant caviar. Very easy to make for an appetizer or a starter. Great for a gathering with friends or family.

Ingredients
 2 Eggplant
 2 Tahini sesame cream
 5 Olive oil
 3 cloves Garlic
 Salt and pepper

Wash and slice the eggplants lengthwise. Score the flesh with a knife, being careful not to pierce the skin. Brush the eggplants with olive oil and place them on a baking sheet lined with parchment paper. Sprinkle with salt. Bake for 25 to 30 minutes until they are golden brown and tender. Let cool and scoop out the flesh with a tablespoon.

Place the flesh in a blender, add the garlic cloves, salt, sesame tahini, olive oil, and blend until you achieve a smooth texture. Warm the mini bites in a hot oven for 5 minutes. Top them with eggplant caviar. Enjoy warm.
