A delicious recipe for mini quinoa muffins with ham and vegetables.
Cook the quinoa in a pot with twice its volume of water.
When the water starts to boil, reduce the heat and let it cook for 15 minutes. Drain if necessary. Set aside in a large bowl.
Preheat the oven to 160 °C. Place paper cups in a mini muffin pan (or, if you don't have cups, grease the pan).
Add all the ingredients to the bowl and mix.
Divide the batter among the molds.
Bake for about 20 minutes or until the tops of the muffins are golden.
To finish, enjoy the muffins while they are still warm.
