This recipe for mini pickled mushrooms is presented.
The day before: soak the cashews in water.
The next day: drain the cashews. Blend them with the tofu, parsley, chervil, garlic, and shallot, along with a pinch of salt.
Add the olives to the sauce and mix.
Wash and slice the mushrooms.
Sauté with olive oil and a pinch of salt.
Open the brioche buns in half and spread the sauce on both sides. Add the mushrooms, pickled onions, and spinach leaves.
To finish, close the sandwich and enjoy, bon appétit!
