Discover this recipe for almond pastries. Made with almond powder and egg whites, these cookies flavored with orange blossom are gluten-free in this version. A simple recipe with only 4 ingredients, but very delicious.

 200 Almond powder
 200 Sugar
 100 Egg white

Preparation of the dough In a bowl, mix the almond flour and sugar with a spatula. Add the orange blossom and mix again.

Separately, lightly whisk the egg whites with a fork. Pour into the first mixture and fold with a spatula until a homogeneous texture is achieved.

Shaping Place the mixture in a piping bag, using either a star tip or a plain tip. Refrigerate for at least 2 hours (preferably overnight).

Preheat the oven to 180 °C, static heat. On a tray lined with parchment paper, pipe sticks about 5-6 cm long, spacing them apart.

Bake in the oven for 15 minutes or until they are lightly golden.

Serve Allow the cookies to cool before handling them. Store in a cookie jar.
