These fun glasses always make an impression and are really not expensive. These tender pearls have a quite appealing texture that allows you to prepare them in multiple ways.
Prepare the "Tender Pearls" by cooking them for 6 minutes in boiling water. Rinse under cold water.
Drain them and, in a mixing bowl, toss them with a drizzle of oil. Let them cool and place them in the refrigerator for at least 1 hour.
Meanwhile, peel and chop the shallot, chop the leaf coriander, and mix everything with the fresh cheese along with the lemon juice, paprika, and chili. Add a little salt.
Cut the flesh of the grapefruit into small cubes. Chop the surimi into pieces. Peel the shrimp if you are adding them.
Mix all the ingredients with the cooled pasta: sauce, grapefruit, surimi, and optionally, the shrimp and/or fish roe.
To finish, distribute into small glasses and chop the chives on top. Serve very cold.
