 4 Leek
 Olive oil
 25 Whole milk
 25 Butter
 25 Type 55 flour
 50 Grated Emmental cheese
 1 Egg yolk
 Fine gray salt
 Freshly ground pepper

Preparation of leeks: Remove the first two layers of the leeks and the green ends. Cut the leeks in half down to the middle and rinse them under running water. Dry.

Preheat the oven to 180°C.

Preparation of the parchment Wrap 2 large rectangles of aluminum foil, overlapping them flat, and cover with a sheet of parchment paper. Drizzle with olive oil, season, and place the leeks on top. Close the parchment.

Baking Bake for 1 hour. When removing from the oven, let the leeks steam in their own moisture for a few more minutes to finish cooking.

Preparation of Mornay sauce In a saucepan, melt the butter and add the flour. Gradually pour in the cold milk and mix vigorously to avoid lumps. Let it cook for 3 minutes at a simmer. Add the grated cheese, mix, and then the egg yolk.

Remove the leeks from their wrapping, roll them up, and place them in a baking dish. Cover with Mornay sauce and bake for 10 minutes.
