This leek quiche is lightened with silken tofu.
Finely slice the leeks before sautéing them in a skillet with olive oil and a little water.
Add the wine after 15 minutes of cooking and cook for 5 more minutes.
Once melted well, remove the leeks from the heat.
In a mixing bowl, beat the eggs and add the soft tofu. Mix in the nutmeg and pepper.
Place the shortcrust pastry in a tart tin. Spread 1 tablespoon of whole grain mustard over the bottom of the tart.
To finish, pour the leek-tofu-egg mixture. Sprinkle with grated cheese. Bake for about 35 minutes in a preheated oven at 210°C.
