I created this recipe as part of the culinary challenge "Compile a Menu." At home, everyone enjoyed this recipe that is both sweet and comforting.

Ingredients
 5 Leek
 2 Onion
 3 Potatoes
 1 Shallot
 salt and pepper
 Olive oil
Directions

Peel the onions and shallots and sauté them in a little olive oil.

Clean the leeks and cut them into slices. Add them to the onions and shallots to sweat a little, then cover them with water;

Peel the potatoes, cut them, and add them to the leeks. Bring to a boil and let cook on low heat until the potatoes are fully cooked.

Blend the soup.

Cut the old cheese into small pieces and incorporate it into the soup. Place your pot back on the heat to melt the cheese.

To finish, blend one last time for any stubborn pieces of cheese and serve very hot.
