Preparation of the fish Preheat the oven to 180°C. In a lightly buttered baking dish, place the peeled, seeded, and coarsely crushed tomatoes. Next, add the quartered onion, chopped parsley, and minced garlic. Sprinkle with a tablespoon of curry.
Cooking the fish Place the slices of cod on the bed of vegetables. Season with salt and pepper. Then moisten with white wine. Sprinkle with small knobs of butter. Place in the oven for about 30 minutes.
Presentation I served this dish with steamed potatoes and for me, low GI broccoli.
