Recipe for Hazelnut and Lemon Cookies

These small cakes, very easy to make with few ingredients, are among the Danish Christmas cakes, but you will enjoy them throughout the year. Made without flour, only with hazelnut powder, they are truly delicious.

Ingredients
 2 Egg yolk
 125 Brown sugar
 ½ Vanilla sugar
 ¼ Baking powder
 1 Lemon (zest + 1 tablespoon of juice)
 100 Hazelnut powder
 75 Powdered sugar

The dough Whisk together the egg yolks and sugars until creamy. Add the other ingredients: lemon zest, hazelnut powder, and baking powder. Shape the dough into a log and wrap it tightly in film. Let it rest for 1 hour or overnight in the refrigerator.

The small cakes Cut the log of dough into slices and place them on parchment paper. However, you can also make more elegant cookies by rolling out the dough on granulated sugar and cutting out shapes, which you then place on parchment paper.

Cooking Preheat the oven to 160°C with fan or 180°C without fan. Bake for 10 minutes, keeping an eye on them. They should not brown too much.

Icing When the cookies have cooled, mix the powdered sugar with a spoonful of lemon juice. Spread the icing on the cakes using a brush and let it dry. Store for a few days in a tin box.
