 4 Guinea fowl supreme
 20 Dry sparkling wine
 15 Liquid cream
 Butter
 Mushroom mixture
 Salt
 Pepper
 Nutmeg

In a well-oiled hot pan, cook the pieces for 5 minutes on each side. Keep warm. Brown the shallot in butter. Add the mushroom mixture. Cook for 5 minutes. Then pour in the champagne and cream. Season with salt, pepper, and add nutmeg. Simmer for 15 minutes.

Then arrange the mushrooms on the plate and place the piece on top. Drizzle lightly with sauce.

To finish, serve with celery puree.

    Supremes of guinea fowl with champagne I made it with thighs. Although I used sparkling wine instead of champagne, it’s delicious. Cooking time is 45 minutes to 1 hour. I added potatoes cut into large cubes and carrots sliced into rounds that simmered.

    Cooking? Are the supremes cooked; if so, when and how? My suggestion: Be careful when posting recipes online not to skip a step.

    I have been making this recipe for years; I use morels, grill the chicken breasts, and then add them to the sauce, warming everything gently, served with sweet potato puree—delicious (I double the sauce).
