Preheat the oven to 230°C. Peel and cut the fruits into large cubes and slice the star fruit into stars, collecting the juice from the cutting in a bowl.
Thread the pieces onto metal skewers, sprinkle them with a bit of brown sugar, then place them on a baking sheet lined with aluminum foil.
Roast the skewers by placing the baking sheet at the top of the oven and let cook for 5 minutes, monitoring the cooking.
In the meantime, prepare the caramel in a small saucepan: add the brown sugar, one tablespoon of water, and the juice from the fruits collected.
Cook over medium heat until you obtain a very lightly colored caramel. Add the finely chopped ginger and half of the lemon juice.
To finish, continue cooking until you achieve a nice color. Serve the skewers on large plates with a drizzle of ginger caramel.
