Recipe for Green Stew with Pecorino

Ingredients
 1 veal stew
 200 smoked bacon bits
 1 shallot
 3 cloves garlic
 25 white wine
 1 olive oil
 flour
 6 potatoes
 150 Pecorino
 Unlimited green vegetables, beans, peas, and legumes.
 1 sage
 salt and pepper

Sauté the floured meat and bacon in a splash of olive oil over high heat. Season with salt and pepper. Add the sage, diced onion, and minced garlic.

When it is well browned, deglaze with the wine and the broth.

Add the peeled or unpeeled potatoes. Let simmer for 45 minutes with the pot partially covered. Monitor and add liquid if it sticks too much.

About 10 minutes before eating, add the cleaned vegetables.

To finish, add the cheese cut into cubes and continue cooking for 5 minutes to allow it to melt. You can save some to serve.
