Today I offer you a delicious side dish for your meals, whether festive or not. They are simple potatoes, but prepared this way, they are particularly tasty and present well.
Peel the potatoes and place them whole in a pot. Pour the coldest water possible over them to cover them completely.
Add the ice cubes and salt. Put the lid on and leave for 10 minutes at room temperature, allowing the ice cubes to melt.
Preheat the oven to 180°C, convection (or 200°C, static heat).
Place the pot on the heat, bring the water to a boil, and cook the potatoes for 3 minutes from the time it boils, no longer! If a white foam forms on the surface, skim it off with a spoon.
Remove the pot from the heat and drain the potatoes.
Generously oil a baking dish with olive oil.
Peel and chop the garlic cloves and distribute them in the dish. Sprinkle with rosemary.
Add the potatoes, sprinkle them with spice, and distribute small pieces of butter on top.
Bake for 40-45 minutes or until the potatoes are golden and tender (test with a knife). There is no need to turn them during cooking.
To finish, take the dish out of the oven, mix the potatoes with the melted butter and serve immediately, sprinkled with fresh parsley.
