My recipe for authentic Provençal focaccia with bacon and olives will make you succumb to pleasure during your dinner cocktails! Very easy to prepare, it is both indulgent, soft, and economical! You can also adapt it to a bacon and cheese version.

Ingredients
 250 flour
 1 pinch salt
 1 dash olive oil
 1 bacon bits
 1 Greek-style black olives
 1 small onion
 20 fresh baker's yeast
 1 egg yolk
 2 sour cream

Prepare the focaccia dough. Put the flour in a mixing bowl, then add the salt, olive oil, and the yeast previously activated in a little warm water. Add 150ml of warm water. Knead until the dough forms a ball that no longer sticks to your fingers. Let it rise for 1.5 hours in a warm place.

Preparation of the filling Cook your bacon. Set it aside. Thinly slice your onion. Pit the olives and cut them into pieces.

Preparation of the fougasse Preheat the oven to a high temperature. On a floured surface, roll out the dough as you would for a pastry. Spread the cream on half of your dough.

Add the bacon, olives, and onions.

Shaping Fold like a turnover. Cut the top of the dough with a knife up to the ingredients, while separating the openings made.

Cooking the focaccia Brush with egg yolk. Place your focaccia on a floured baking sheet. Bake for 20 to 25 minutes. The focaccia is done when it is nicely golden.

    The comments are coming in fast... This recipe is not great, indeed. The oven temperature is not given, and the complaining homemaker says that the bread is too hard... Etc... It needs a bit more flour for the dough to be more elastic. Don't use sour cream, as it doesn't help at all, but mix the ingredients with the entire dough. Finally, for this type of bread, don't hesitate to add more than just a drizzle of olive oil. That way, it will be excellent.

    Excellent! Thank you for the recipe. I made it and devoured it. My suggestion: One can replace the bacon in the bread with pieces of blue cheese. A delight.

    Super Finally, a recipe for fougasse, I've been waiting for this for a long time... I love it. Thank you! My suggestion: I sauté the onions with turkey ham (no pork, of course), otherwise it stays crunchy.

    You can almost hear the cicadas! Easy to make and excellent flatbread! My suggestion: For a quick version: buy pizza dough, top it, and bake!

    Good but lacking salt Easy to make, very good but the dough lacks salt. With the filling it’s fine, but if you eat just the dough, it’s a bit bland. My suggestion: I didn't brush with egg; instead, I used a brush with a bit of olive oil and water. The result was perfect, soft on the inside and crispy on the outside.
