Milk
 500 Semi-skimmed milk
 125 Roasted hazelnuts
 2 Powdered sugar
Almond cakes
 125 Fresh peeled hazelnuts
 180 Butter
 6 Egg white
 100 Flour
 120 Powdered sugar
 1 pinch Salt
 80 Blueberries

Place the hazelnuts in a blender and blend to obtain small pieces. Pour the milk into a saucepan and gently bring to a simmer. Remove from heat, add the hazelnuts, cover, and let steep for 30 minutes.

Preheat the oven to 170°C (about 340°F). Place the hazelnuts in a food processor and blend in short bursts until you obtain a fine powder. Melt the butter in a saucepan until it becomes browned.

In a bowl, mix the flour, powdered sugar, salt, and ground hazelnuts. Add the egg whites and melted butter, mixing until you have a smooth dough.

Pour the batter into silicone molds, distribute the blueberries, and bake for 8 minutes; the tops should start to brown. If not, extend the baking time, checking to avoid overcooking. Remove from the oven, let cool on a rack, and unmold.

To finish, strain the milk and gently heat it again if you wish. Serve it with the pastries while still warm or cold.
