Cut the lemon in half and squeeze it.
Mix 75 g of butter, mustard, and drained capers.
Pour the lemon juice (optional: add some pulp), season with salt and pepper, and mix again. Sauté the fish fillets skin-side down in the remaining butter.
Cover and let it simmer on low heat for about 10 minutes: the fish should be just cooked.
Sprinkle the fillets with butter flavored with capers.
Off the heat, cover the pan while the butter melts.
To finish, serve the fish immediately coated in the sauce. Accompany everything with rice.
