Recipe for Feta and Zaatar Pastries

Crispy and melting pastries filled with fresh cheese and zaatar (a spice blend), with Moroccan flavors.

Ingredients
 10 brick pastry
 200 Feta cheese
 100 fat-free cream cheese for me
 1 zaatar or dried thyme
 3 Olive oil
 2 raw sesame seeds

Preheat the oven to 200°C. Line a baking sheet with parchment paper or a silicone mat.

In a large bowl, mash the feta with a fork and mix well with the cottage cheese and za'atar until everything is well combined.

Pour a few tablespoons of olive oil into a small bowl, grab a brush, and place it near the workspace. Cut the pastry sheets in half (using scissors), then brush the half-sheet with olive oil. Fold the rounded part to form a rectangle, then place a large tablespoon of filling on one side, fold into a triangle, and continue folding in triangles until the entire sheet is folded. Place on the prepared baking sheet and repeat with the remaining sheets.

To finish, when all the pastries are on the baking sheet, lightly brush the tops with olive oil, sprinkle with sesame seeds, and then bake for about 10 minutes, until the edges are golden and the texture is crispy. Serve hot, with a salad or as an appetizer.
