I offer you my super easy recipe for ravioli. I'm suggesting a ricotta and spinach version, but you can adapt the filling to your tastes once you know how to make the ravioli dough.

Ingredients
 200 Flour
 100 Semolina flour
 3 Egg
 250 Ricotta
 350 Spinach
 50 Parmesan
 ½ Nutmeg

Start by preparing the pasta dough. In a mixing bowl, combine the two flours and the eggs with a fork. Once the dough starts to come together, mix by hand on a flat surface (or in a mixer if you have one).

Once the dough is smooth, wrap it in plastic wrap and let it rest for 30 minutes.

In the meantime, prepare your greens by washing the spinach and transferring them to a pot. Cook for 5 minutes until you achieve a tender texture (but not mushy) and let them cool.

When the spinach has cooled, squeeze it and chop it. Then place it in a bowl with the ricotta, grated cheese, grated nutmeg, season, and mix.

It is time to take the ravioli dough and divide it into 3. Flatten each piece of dough to a height of 1cm across the entire surface. Cut wide rectangular strips and place a small spoonful of filling, leaving about 3cm between each pile.

Brush the edges of each pile of filling with a little water and fold the dough over itself. Make sure to seal the edges well to ensure they stay closed during cooking. Then cut out each pasta and let them dry on a floured surface.

Cook the dumplings for 3 to 4 minutes in a pot of boiling water.

To finish, serve with a cream sauce or simply with grated cheese on top.
