A dessert with apricots, fresh and light with an airy mousse made with mascarpone. Perfect to delight the family, with an easy and quick recipe.
Wash the apricots, remove the pits, and cut them into wedges.
In a saucepan, add half of the apricots and the coconut sugar. Cook over low heat to make a compote. Blend if you want it very smooth.
In a bowl, place the mascarpone, cream, maple syrup, and vanilla. Whip together using a whisk or mixer until you achieve a firm texture, similar to whipped cream.
To finish, in serving glasses, pour in a layer of compote, a layer of vanilla mousse, then a layer of fresh apricot wedges. Repeat with a layer of compote, a layer of mousse, and finish with fresh apricots.
