Cut 2 cloves of garlic in half and place them inside the chicken, along with thyme and rosemary. Season the inside with salt and pepper. Brush with olive oil. Season the skin of the chicken (over the olive oil so it adheres well to the skin).

To finish, place the young chicken cold in the oven (to ensure it is tender) and raise the temperature to 200° for 45 minutes, basting occasionally with cold water to create a sauce at the end of cooking. If the skin browns too quickly, lower the temperature.

    Delicious because the small chicken does not dry out. For my part, I baste it during cooking with a mixture of vinegar and water (my grandmother's recipe).

    I have made and remade this, simple and absolutely delicious! In the middle of cooking, I add to the dish: potatoes, carrots, zucchini, onions, and unpeeled garlic, a drizzle of olive oil, salt, pepper, and dried herbs.

    Following the instructions is really very easy and delicious to eat with a few small potatoes around and 2 tomatoes cut into quarters. Thank you for the recipe, a real delight.

    Perfect, the chicken is really very tender and moist. I will do the same thing tomorrow with noodles mixed with the sauce recovered from the dish.
