Today I offer you squid fritters. They can be served as an appetizer or as a dish, accompanied by your favorite sauce or a mix of sauces. The batter is light, puffs up well during cooking, and is crispy afterward.
In a bowl, mix the flour, cornstarch, and salt.
Add cold sparkling water and mix until you achieve a smooth and homogeneous texture.
Cover the bowl and place it in the refrigerator for 30 minutes.
In the meantime, thoroughly dry the squid with paper towels. Prepare a bowl with some flour.
Heat a frying oil bath.
Take the dough out of the fridge, add the baking powder, and mix well.
Coat each ring in flour, shake off the excess, then dip it in batter and immerse it in the frying oil.
Cook on both sides until golden brown.
Remove the donuts and place them on a plate with paper towels to drain the excess oil.
To finish, serve immediately with your choice of sauce.
