Cook the salted and peppered fillets in the oven, preheated to 180°C, for 15 minutes.
Prepare the cream sauce: melt the butter in a pan, add the white wine and cook on low heat for a few minutes. Off the heat, add the cream and mustard. Mix well.
Finally, pour the cream over the cooked fish fillets and add chopped parsley just before serving.
