Ingredients
 300 Red lentils
 50 Dried apricot
 50 Almond
 1 Red onion
 1 Yellow zucchini
 Purple basil
 Gray salt
 Olive oil
 White balsamic vinegar

Rinse the lentils and cook for 15 minutes in a pot of simmering water. Add salt at the end of cooking. Drain and then let cool.

Cut the dried apricots into small cubes. Open the fresh almonds and cut them in half. Slice the red onion. In a bowl, prepare a vinaigrette with white balsamic vinegar, salt, and olive oil.

Mix the lentils with the apricots, onions, and fresh almonds in a bowl.

Season with the dressing. Adjust with salt if needed.

To finish, in a deep plate, arrange the salad and then garnish it with a few almonds, purple basil shoots, onion slices, and zucchini slices.
