 4 Black cod fillet
 Coarse sea salt
 1 Mashed potatoes
 15 Olive oil
 4 cloves Garlic
 25 Milk
 1 Thyme
 2 Homemade breadcrumbs
 Fine gray salt
 Espelette pepper

Preparation of the fish. Cover the fish with coarse salt and let it rest in the refrigerator wrapped for 6 hours. Rinse the fish and let it soak in cold water for 30 minutes.

Cooking the potatoes In a pot, place the washed potatoes, cover with water, add coarse salt, and bring to a boil for 30 minutes. Peel the potatoes, mash them, add olive oil and grated garlic.

Preparation of the brandade
Preheat the oven to 190°C. In a saucepan, pour in the milk, add water, thyme, a pinch of chili powder, and 2 crushed garlic cloves. Bring to a boil, then turn off the heat. Dry the fish, place it in the saucepan, and poach for 5 minutes. Turn off the heat and let the fish sit for another 5 minutes. Add the drained fish to the mashed potatoes. Mix in a little of the cooking liquid to make the brandade smooth.

Oven Cooking Pour the mixture into a baking dish, sprinkle with breadcrumbs, add a drizzle of olive oil, and bake at 190°C for 15 to 20 minutes.

    not much flavor and dry .... it really needs a lot of cooking juices added
