Cut the carrots and bell pepper into julienne strips.
Slice the garlic and onion and sauté them in a pan with a little sesame oil. Add the carrots and cook gently.
Cook the beans in a pot of boiling water for 5 minutes. Drain and set aside.
Cook the Thai Coconut Lemongrass rice in a pot of boiling water. Drain.
Sauté the shrimp and bean sprouts in a pan with sesame oil and ginger. Add the drained rice to the pan, then add soy sauce and chili.
To finish, serve immediately with fresh coriander.
