For a melting center, simply reduce the cooking time by half. I sometimes add slivered almonds for a bit of crunch.
Melt the butter and chopped chocolate in a double boiler.
Beat the egg yolks and sugar. Add the chestnut flour, ground almonds, then the melted butter and chocolate. Mix until a smooth dough is obtained.
Beat the egg whites until very stiff and gently fold them into the mixture.
Place the dough in a greased cake pan.
To finish, cook for about 30 minutes at setting 6.
