 200 Dark baking chocolate at 70%
 125 Butter
 3 Egg
 130 Sugar
 60 Flour

Preheat the oven to 200°C and attach the whisk to the mixer.

Separate the whites from the yolks. Pour the whites into the bowl with a pinch of salt and whip until stiff peaks form, setting for 5 minutes in reverse at speed 4. Set aside outside the mixing bowl.

Break the chocolate into pieces and add the softened butter to the bowl. Set for 4 minutes at 80° on speed 1. Then add the egg yolks and sugar, and blend for 30 seconds on speed 5.

Put the whisk back in the bowl and fold in half of the whipped egg whites. Mix for 15 seconds on speed 1, then add the remaining egg whites and mix for 4 seconds on speed 3.

Pour the mixture into a large mold or individual buttered molds and bake for 8 minutes.

To finish, you can spread melted chocolate on top and add chopped nuts or chocolate chips, or you can enjoy it without any topping; it will still be just as delicious and melting. Best enjoyed warm or cold.
