Here is the recipe for a special tiramisu, a revamped version with chicory. A simple idea to change up the classic version.

Beat the egg yolks with the sugar until they turn pale.

Add the mascarpone and the chicory and beat for another 2 minutes.

Beat the egg whites until stiff and fold them into the previous mixture.

Fill the glasses by alternating the cream and the cookies, starting with the cookies and finishing with the cream. The cookies do not need to be moistened; they will absorb moisture from the mousse while resting in the refrigerator.

To finish, let it rest in the fridge for 24 hours. At the time of serving, decorate to your liking: chocolate or cookie crumbs.
