I repeat this process four times to remove the bitterness from the fruit. 2 - I weigh my clementines and add the same weight in sugar to my pot, along with 10% water, then bring it to a boil and let it boil for 5 minutes. After that, I stop the cooking and let it sit until the syrup cools to a very warm temperature. Not completely cold, but warm... then I bring it to a boil again for 5 minutes and repeat this four times throughout the day. In the evening, I cover it and leave it in the syrup... and I do this for 2 days.

On the 3rd day, I remove 2/3 of the syrup and take out my clementines. Then, I make a lighter syrup, which means I add 300 g of sugar and 200 g of water to the remaining 1/3 of the previous syrup and repeat the same process as the previous 2 days, which means I bring it to a boil for 5 minutes and then let it cool. After 96 hours, I remove my clementines and drain them on a rack above the pot where they have been candied, then I put them in my oven at 55 °C for 7 hours. I have an air fryer, so it doesn’t heat up, but you can do this in your oven!
