Overcooked broccoli florets, and there I created this puree. A wonderful taste surprise! You can replace the parmesan with a tablespoon of ricotta.
Separate the florets from the broccoli.
Make a cross incision at the base of each stem.
Steam the florets for 8 minutes (in a pressure cooker). Drain and then blend the broccoli finely.
To finish, add the butter, fresh cream, and grated cheese. Season with salt and pepper, then mix. Heat over low heat and serve hot.
