A recipe for espuma designed to highlight the Brotherhood of Potato Enthusiasts.

Ingredients
 1 Equal-sized Blue Belle potatoes
 4 Water ingredient
 40 coarse salt
 400 Milk
 400 Liquid cream 35% fat
 200 Butter
 Salt
 White pepper
 1 Lime
 Olive oil

Peel the potatoes and wash them. Cook them in salted water, starting with cold water, for 20 minutes. Once cooked, drain them, return them to the pot, and moisten with cream and milk. Season with fine salt and white pepper.

In a hot pan, cook the butter until brown, then pour it over the potatoes. Bring the mixture to a boil and let it simmer for 10 minutes.

Blend everything until smooth. Pour the mixture into a siphon, seal it tightly, and charge it with gas (2 cartridges). Shake the siphon well and keep it in a water bath.

Zest the lemon, add it to the crab meat in small glasses, arrange the crab, drizzle with olive oil, and generously cover with the espuma.
